Chocolate cupcakes

{Chocolate Cupcakes}

1 Cup of butter
2 Cups of packed brown sugar
1 Cup of white sugar
4 Large Eggs
2 Teaspoons of vanilla
2 2/3 Cups of all-purpose flour
¾ Cups of unsweetened cocoa powder
1 Tablespoon of baking soda
¼ Teaspoon of salt
1 1/3 Cups of plain yogurt
1 ¼ Cups of boiling water

  • Pre-heat oven to 350 degrees Fahrenheit and place paper cupcake cups in your cupcake pan or spray with non-stick spray. 
  • In a mixing bowl cream the butter, brown sugar and white sugar together.

  • Add eggs, one at a time, making sure that each one is incorporated before adding the next.
  • Beat on high until the mixture is light and fluffy, it should take just a minute or two.

  • Add the vanilla.
  • In a separate bowl mix together the flour, cocoa, baking soda and salt.
  • Slowly add half of the flour mixture but do not over mix.
  • Add the yogurt.
  • Add the other half of the flour mixture.
  • Mix the water in slowly, allowing it to fully incorporate before pouring in more to avoid a splashy mess. Do not over mix! I cannot stress that enough.

  • Put into prepared cupcake cups and fill to 2/3 full

  • Bake for approximately 20-22 minutes 

  • Place on a wire rack to cool, if you do not have a wire rack you can lay the cupcakes on their side to cool. I frosted these with my cookies and cream frosting, yummy!

I would give these cupcakes a rating of 3 cupcakes out of 5, they were really great!

Oooo Sarah that looks so yummy! I love chocolate! I planned to bake cake this afternoon but I do want to try your cupcakes :D
