Chilaquiles Recipe

{Chilaquiles}
Chilaquiles is a traditional Mexican breakfast item; it is made using leftovers normally. I posted a recipe for Tomatillo salsa and I used that same salsa for this recipe and it was delicious!


{Ingredients}
  • Vegetable oil for frying
  • 10 stale corn tortillas cut into thick strips or 1/8ths (If you don’t have any stale corn tortillas you can set them out on your counter on a towel to dry overnight)

  • 3 Cups of Tomatillo salsa (Recipe can be found here) or you can use any salsa or green Chile sauce

  • ½ Cup of shredded or crumbled Mexican cheese (Queso Fresco or something like that, a creamy white cheese)
  • ½ Cup of sour cream
  • Cilantro, salt and pepper to season


{Directions}
  • Get a plate and put a paper towel on it, I usually put several paper towels.
  • Using a deep frying pan pour about ¼ of an inch of oil into the bottom of the pan. Heat the oil over medium heat until it is hot enough to fry in.
  • Add the tortillas 4-6 pieces at a time and fry them until they are a light brown. Pull them from the oil and put them on the plate with the paper towel on it.

  • Once the chips are fried discard the oil; I have a jar that I discard into. Wipe out the pan with a paper towel to get some of the oil off.
  • Put the salsa in the pan and allow it to warm up. Add the chips and cook on low for about 5 minutes, just enough for them to get coated and mix with the salsa, not enough that they get soggy.
  • Put the chips onto plates for serving and then top with salt and pepper, sour cream, Mexican cheese and cilantro.


Serve and enjoy!

Hint- Put an egg on top to make this meal taste even better! We cook ours over medium and throw it right on!
