Simple Chicken Curry

{Simple Chicken Curry}

This was my very first time making any kind of Indian food (or eating it for that matter!) and it was simple and delicious. If you haven’t ever made any Indian food before; this is where you should start, the taste is very subtle.

{Ingredients}
  • 2-4 boneless skinless chicken breasts, cut into ½ inch cubes
  • A drizzle of coconut oil (or olive oil)
  • 3-4 tablespoons of red curry paste
  • 2 ½ cloves of garlic
  • 1 (14oz) can of coconut milk, shaken (you can find this in the aisle by the Asian food, most stores carry it, you just have to find it)
  • 1 (14.5oz) can of diced tomatoes
  • 1 (14oz) can of tomato sauce
  • 3 tablespoons of sugar
{Directions}
1.  Put the oil in a large pot or deep frying pan (it has to be deep enough to hold all of the tomatoes and sauce that you are going to add)
2.  Add curry paste and garlic and simmer, stirring very often for about 3 minutes

3.  Over medium heat add the chicken to the curry mixture and stir the chicken around to coat it

4.  Cook for 10 minutes until the center is no longer pink
5.  Pour in the shaken coconut milk, tomatoes, tomato sauce and sugar, stir it all in until everything is mixed together well

6.  Simmer on low heat, uncovered for 50-60 minutes, stirring frequently

Guest Post- BPA, It's Not For Me!

{Guest Post}

{BPA: It’s Not For Me!!!}

Have you seen the newest studies regarding BPA? What, you haven’t? I know you are probably asking yourself the question what is BPA? BPA stands for Bisphenol A. It is a chemical that has been used for more than 40 years in the manufacturing of many hard plastic food containers such as baby bottles, reusable cups, lining of metal food and beverage cans including canned liquid formula.

In recent studies, the use of BPA has had subtle effects in lab animals. It has not been proven to harm children or adults yet but these newer studies have the Department of Health and Human Services investing a significant amount of money on further studies. In the meantime the FDA is supporting current efforts by the industry to stop the manufacture of infant bottles and feeding cups made with BPA in the US market.
So why do you need to know this? To begin with I, myself, did not know anything about BPA until I joined the Healthy Child Newsletter. After seeing this I decided I wanted to research it more. Now remember, at this point I am willing to try anything with my 8 year old daughter, Gracie, who suffers from IBS (Irritable bowel syndrome). I have to admit that after reading the research the jury is still out on this subject for me. But that does not mean that I will continue to look at my Mt. Dew can the same again.

The reports I have read have convinced me to change some of the habits we have. I personally do not have to be concerned with the bottles and sippy cups. But I am going to make a concentrated effort to limit or even eliminate BPA in my household. Here are some ways that you can do the same. You can cut down your exposure by avoiding canned foods and using glass containers rather than plastic. If you do have to use canned food- rinsing them with water prior to heating and serving can lessen the BPA ingestion.

I would love to know your opinion of BPA, have you heard of it before now? What have you don’t and what will you do to limit the BPA in your household?

Arthur- Review

{Arthur}
Rated- PG-13

{About}
Arthur (Russell Brand) is a loveable guy who lives off of his mother’s unlimited fortune; he lives with his nanny and best friend Hobson (Helen Miren). Arthur has a problem with alcohol and needs someone around to control him; enter Susan Johnson (Jennifer Garner) an important executive and the woman who Arthur’s mother says he must marry if he intends to inherit her fortune. All of that would be ok if he hadn’t just met and fallen for Naomi (Greta Gerwig) a down to earth tour guide.

Arthur is going to take the world on, he will do whatever it takes to be with Naomi and not Susan; including abandoning his fortune and try to make a living on his own.

 {My Opinion}
 This movie was very funny! I have never seen the original so I do not know how they compare to each other. Russell Brand (I am obsessed with him!) and Helen Miren have amazing chemistry and the comedy plays well between them. I did enjoy this movie but I would say wait to see it on DVD.
